Start with learning Embedded design software like LabView that allows you to download your software-designed hardware layout onto an FPGA to make custom hardware. Then, learn embedded programming for microcontrollers. Most new hardware manufacturing today simply uses off-the-shelf microcontrollers and IO with custom embedded software to run it.
