There is plenty of low fat food out there- veggies (or salads as suggested by Julia), fruits.

How about using the same machine used to make candy-floss (also known as cotton candy in some places) to make big fluffy food material that is not sugar based and then using that fluffy material to make large sizes of bread or pizza or other foods that look large but are mostly air.
How about serving large bowls of soup, which is mostly water and can be flavored easily without adding many calories?
